Acı turşu, genellikle çeşitli sebzelerin (biber, havuç, karnabahar vb.) sirke, su, tuz ve baharatlarla fermente edilmesiyle hazırlanan bir atıştırmalıktır. Özellikle acı biber eklenmesiyle zenginleştirilen bu turşu, hem lezzetli hem de sağlıklı bir seçenek olarak değerlendirilir. Türkiye'de de oldukça popüler olan acı turşu, çeşitli yemeklerle birlikte ya da tek başına tüketilebilir.
Acı turşunun kilo aldırıp aldırmadığı, tüketim miktarına ve genel diyetinize bağlıdır. Acı turşu, düşük kaloriye sahip bir atıştırmalık olmasına rağmen, aşırı tüketildiğinde ve yüksek kalorili diğer yiyeceklerle birlikte sıkça tüketildiğinde kilo alımına katkıda bulunabilir. Ayrıca, aşırı tuz tüketiminin de kilo kontrolü üzerinde olumsuz etkileri olduğuna dikkat edilmelidir.
Acı turşunun besin değerleri, kullanılan malzemelere ve hazırlama şekline göre değişiklik gösterebilir. Ancak genel olarak 100 gram acı turşu için besin değerleri aşağıdaki gibidir:

Diyetisyenler acı turşunun sağlıklı bir atıştırmalık olduğunu ve diyet planına dahil edilebileceğini belirtmektedir. Özellikle düşük kalori içeriği sayesinde kilo vermek isteyen bireyler için önerilebilir. Ancak, tuzlu içeriği ve aşırı tüketiminin olumsuz sonuçları göz önünde bulundurulmalıdır.
